Our chef explains: "We seek the origin of our history reflected in our dishes. [...] We seek to show the great value of their legacy by enjoying it on the palate. That is why we use modern cooking techniques with ingredients left to us by our ancestors: carrots, aubergines, olive oil, rosemary, thyme, garlic, almonds, peppers, artichokes, broad beans... All this, according to the season and without leaving the surroundings of our own hotel".
